1. Prepare the Meringue Layers
• Beat Egg Whites: In a clean, dry bowl, beat egg whites and cream of tartar on medium speed until foamy.
• Build Meringue: Gradually add fine sugar, 1 tbsp at a time, while beating on high speed until stiff, glossy peaks form.
• Incorporate Stabilisers: Add vanilla extract, cornstarch, and white vinegar. Beat for another 30 seconds until well incorporated.
• Fold & Portion: Gently fold in the ½ cup chopped cashew nuts using a spatula. Divide the meringue evenly into the 3 prepared pans and spread smoothly.
• Bake & Cool: Bake for 1 hour or until dry and crisp but not brown. Turn off the oven and let the meringues cool inside with the oven door slightly ajar to prevent cracking. Once completely cool, carefully remove from pans and set aside.
Mango Selection: Use ripe but firm mangoes (Carabao or Ataulfo) for the best sweetness and structural integrity.
2. Prepare the Whipped Cream Filling
• Whip: Beat all-purpose cream, powdered sugar, and vanilla extract until soft peaks form. Do not overbeat. Keep chilled until ready to use.
3. Prepare Additional Fillings
• Toast Cashews: Toast cashew nuts in a dry pan or oven at 160°C (320°F) for 8–10 minutes until golden. Let cool completely, then chop.
4. Assemble & Decorate
• Fill: Spread a generous amount of whipped cream, arrange mango slices evenly over the cream, and sprinkle chopped cashews.
• Second & Third Layers: Repeat the exact same layering process with the second meringue layer, then top with the third meringue layer.
• Frost & Coat: Frost the top and sides of the cake with whipped cream frosting. Press chopped cashews all around the sides.
• Garnish: Decorate the top with whipped cream swirls, a generous fan of mango slices in the center, and additional cashews as desired.
5. Chill & Serve
